Huevos Rancheros



I kind of cheated with this recipe. I love this Las Palmas green chile sauce that I use for enchiladas and chilaquiles. This sauce is really useful for many dishes.

Take half of  the small can of enchilada sauce, one roasted tomato, and chile. Blend well in a blender until the the sauce is red.   Heat and serve.

I don't fry the tortillas because I like a healthier version of this dish so I just warm them over a comal [or hot pan].

In a small pan, heat oil until very hot and fry your eggs. I like them over easy. Serve on top of the warm tortillas, and top with the sauce. Add a slice of monterey jack cheese on top and its ready to serve.  This dish is so good!!

Mexican Rice


  • 1/2 can of tomato sauce
  • 1/4 small onion diced
  • 1 cup of white rice
  • 2 tablespoons of vegetable oil
  • 1 chicken bouillon cube 
  • salt to taste
Heat oil in a small pot, fry the rice until it turns yellow and is well coated with oil, add onions and grill for 2 minutes, add tomato sauce and cook for 2 minutes, add 2 cups of water, buillon cube and 1 tsp of salt. Bring to a boil and turn down and cover to simmer for 15-20 minutes or until water is completely consumed. Add corn or peas to rice.

Blueberry Piña Smoothie Para mi Papa






  • 1/2 cup of fresh blueberries
  • 1 yogurt
  • 1/4 cup canned pineapple or fresh pineapple
  • 2 cups of crushed ice
Combine all ingredients in a blender, add 1 table spoon of fiber and protein powder each to make it a protein smoothie. 

I made this drink for my father this week. He came back exhausted from New York and spent a week in the hospital recovering.  He wasn't able to hold any food down but enjoyed the smoothie. It is a good source of protein for someone on a Renal Diet.

 My father is waiting for a kidney transplant and receives dialysis 3 times a week. He needs a kidney donor ASAP! He is 0+ and if you are interested in donating a kidney to him please contact:

New York! Nueva York!















Sorry for delay in posts. I was in New York City with my parents for 4 days and to my horror I had some bad milk in my coffee the first morning in NYC! It made me sick the whole time I was there so I wasn't able to enjoy the culinary delights of the Big Apple. I was ready to eat some good food and take some beautiful pictures! In spite of this I did get a chance to sight see so I'm sharing some pictures of the beautiful city and of my parents. Disfruten

Agua de Jamaica














Have you every wondered how to make Jamaica? This is the red drink that looks like punch. You find it in Mexican restaurants alongside of the Tamarindo and Horchata. Technically this is Hibiscus flower tea and it is supposedly good for your kidneys. My mom would always say, "Tomatelo porque es bueno para tus riñones!" This is a healthy alternative to soda or the sugar loaded punch alternatives. 


1 cup of dried jamaica
2 cups of water

Boil the jamaica in water and let simmer for 5 minutes. Fill a (1-2 gallon) pitcher with ice and pour jamaica until ice melts and fill the rest of the pitcher with water. Sweeten to taste. Serve cold with ice!

Simple and refreshing.

Creamy Tomatillo Guacamole




This is the second recipe of a series of guacamole recipes. I bought these avocados at Trader Joes this week and they turned out to be delicious! This recipe is SUPER DUPER EASY!

  • 1 avocado
  • 1 yellow chile
  • 2 tablespoon of fresh cilantro [or more]
  • 2 small mexican onions [look like chives]
  • 1 lemon slice [optional]
  • 1/4 pound of tomatillos
  • salt and pepper to taste
broil tomatillos and onion until blackened [about 5 minutes on each side], squeeze lemon juice and blend all ingredients until its well mixed and creamy. I love a lot of cilantro. Salt and pepper to taste.  This goes great on tacos, taquitos or sandwiches. Add more chile to make it more picoso!

Chunky Guacamole




Sorry for the delay, my internet access has been down at my house.  But I give you one of the simplest recipes you'll ever find for a great guacamole. 

  • 1 diced avocado
  • 1 small finely chopped mexican onion [or red onion]
  • 1 tablespoon of chopped cilantro 
  • 1 tablespoon of lemon juice
  • 1 small chopped tomato
  • 1/2 of a finely chopped raw jalapeño [or more if you want it spicier!]
  • salt and pepper to taste
Take all these ingredients and mix them well until guacamole is creamy but still a little chunky. The lemon juice will help stop the guacamole from turning brown. Eat with chips, in a taco or with a warm tortilla.
